Elles visent aussi \u00e0 d\u00e9velopper des m\u00e9thodes combin\u00e9es ou alternatives aux m\u00e9thodes de conservation existantes comme l\u2019utilisation de substances \u00e0 pouvoir antimicrobien et\/ou antioxydant (huiles essentielles, bact\u00e9riocines) utilisables dans la bioconservation des aliments.
